Ingredients
Serves 2–4

- 3 large eggs, room temperature
- ¾ cup whole milk, room temperature
- ¾ cup all-purpose flour
- ¼ tsp fine sea salt
- 3 tbsp unsalted butter
To serve:
- Fresh berries (strawberries, blueberries, raspberries)
- A drizzle of maple syrup
- Lemon zest or a squeeze of fresh lemon juice
How to Make a Dutch Baby Pancake
Step 1: Preheat Your Oven (and Your Pan!)
Place a 10-inch cast iron skillet in the oven with the 3 tbsp of butter in it, and preheat to 400°F. This step is non-negotiable — a screaming hot pan is the secret to that dramatic puff.
Step 2: Whisk the Batter
Add the eggs, milk, flour, and salt to a bow. Whisk until smooth.
Pro tip: Room temperature eggs and milk make a fluffier Dutch baby. Take them out of the fridge 20–30 minutes before you start.
Step 3: Remove cast iron pan
Carefully remove the hot skillet from the oven.
Step 4: Pour and Bake
Immediately pour the batter into the buttered skillet and return it to the oven. Bake for 15 mins and then lower the temperature to 350 and bake for another 5-10 minutes (until golden brown and puffed up).
Step 5: Top and Serve Immediately
The Dutch baby will start to deflate a little as soon as it comes out of the oven — that's totally normal and part of its charm. Add fresh berries, drizzle with maple syrup, and finish with a little lemon zest. Serve straight from the skillet.
